To make the pickled onions, put the sliced onions into a small bowl. Mix white wine vinegar and sugar, and pour the mixture over the onions. Leave for 15 minutes.
TIP
Use a mandoline slicer for the red onions to get ultra-thin, even slices. The thinner the onions, the quicker they pickle and the better they layer into the sandwich.

Butter each slice of bread with Lurpak® and scatter with watercress.
TIP
For extra crunch, lightly toast the rye sourdough slices before spreading with Lurpak®. It adds a satisfying bite and holds up beautifully against the red peppers and pickled onions.

Top with roasted red pepper and then with the roast beef.
TIP
If you are roasting your own red peppers, place them under a hot grill or directly over a gas flame until the skins blacken and blister. Let them steam in a covered bowl for a few minutes, then peel off the skins easily for a silky, flavourful result.

Scatter over the pickled onions and top with the remaining slice of bread. Serve immediately.
