Method
For the coleslaw

In a large bowl, add yoghurt, lemon juice, and horseradish sauce and mix well.

Add the cabbages, red onion, and carrot and stir well so all the vegetables are evenly coated in the dressing.
TIP
Use a sharp knife or a mandoline to finely slice the cabbages and carrot. The finer the slices, the better the dressing will coat every bite, giving you that perfect creamy crunch.

Season with salt and fresh black pepper and leave the coleslaw in the fridge for 30 minutes to develop the flavour.
For the sandwich

Butter the two bread slices with Lurpak® butter and top one of them with the shredded chicken.
TIP
If you do not have leftover chicken, marinate a chicken breast in a little olive oil, lemon juice, thyme, and rosemary for added flavour. Roast in the oven at 180 °C oven until juicy and cooked through. You can also use chicken thighs for an even richer taste and extra succulence, as they are naturally full of flavour and stay wonderfully moist.
