A T-bone steak is a premium cut of beef from the short loin section of a cow. It has a T-shaped bone and a larger strip steak on one side with a bold, beefy flavour, and a smaller, tender filet mignon on the other side with a mild, buttery taste. A T-bone steak is perfect for grilling or pan-searing at high heat, as the bone helps keep it juicy and flavourful. The fat within the meat, known as marbling, also enhances its juiciness and flavour.
Good food deserves Lurpak®, especially when T-bone steak is on the menu. This T-bone earns its crown with a proper sear and a buttery finish that awakens flavour and exceeds every expectation. Seasoned with rosemary, thyme, and garlic, and topped with fresh mint and lemon zest, it gives the steak a fresh, aromatic finish without getting in the way of the beef.

Method
Remove the steak from the fridge and bring it to room temperature. Rub the steak with black pepper, half of the melted Lurpak® and vegetable oil.
Before seasoning, pat the steak dry with paper towels to remove any excess moisture, which can cause steam rather than a high-heat sear. This ensures the steak sizzles immediately upon contact with the hot surface, locking in juices and improving texture. A dry surface also allows seasonings and oil to adhere better.
Meanwhile, heat a griddle pan or a hot BBQ. When the griddle is hot, season the steak with salt, rosemary, garlic, and thyme, and cook it for 3 minutes on each side for rare, 4 minutes on each side for medium-rare and 5 minutes on each side for well done.
When placing the steak on the hot griddle or BBQ, use tongs to lay it away from you to avoid oil splatter burns, and do not move or press it down for the full 3-5 minutes per side. Let it sear undisturbed until it releases naturally, flipping once for even browning on both sides.
Take the steak off the griddle or BBQ, cover loosely with foil and leave to rest for 4-5 minutes.
Sprinkle with fresh mint and lemon zest and serve the steak topped with the remaining Lurpak® Chilli & Garlic.
Serve with a large green salad and a baked sweet potato.
